Joe's Slaw

Ingredients

Cabbage
Red Cabbage
Celery
Carrots
Onion
Red Onion
Cucumbers
Radishes
Garlic
Habanero peppers
Jalapeno peppers
Mayonnaise
Red wine vinegar
Olive oil
Ground black pepper
Ground sea salt
Red pepper

Preparation

I don't have a set ratio measured out for any ingredients. Half a Cabbage head sliced against the grain to produce thin and long pieces for both regular and red cabbage.
Cut around the heart in the center and end up with a square of cabbage heart discarded.

Handfuls of cabbage are placed in one of two large mixing bowls. Vinegar is poured onto cabbage in the bowl to start soaking. Carrots are shaved into long and thin shavings with a peeler and I have yet to put in too many carrots, it takes awhile to shave a big pile of carrots. Handfuls of carrots can be thrown into the second bowl and a handful of cabbage can be thrown on top of each handful of carrot shavings.

Radishes are cut in halves or fourths depending upon the size of the individual radish. I buy two batches of fresh radishes, but I don't use the entire second batch. Ilike to eat a radish as a snack, so the extra goes in a plastic sandwich bag. The size of the pile of radishes is about the size of the pile of celery and the size of the pile of cucumber pieces which are cut lengthwise in quarters and then cut into cucumber cubes. Piles of radishes, cucumbers, celery, and a small pile of finely diced onion or thin sliced stringy onion, are hand mixed from bowl to bowl.

Half full bowls are then sprinkled with sea salt, black pepper, red pepper, diced up garlic, habanero, and jalapeno peppers.

A large blob of mayonnaise is put in each bowl and some olive oil.

I use glass bowls with plastic tops and everything fits in one large bowl: refrigerate.

Comments

I have yet to fail to eat the whole bowl myself, sometimes transferring the remains into a smaller bowl, and so far the fresh crunchy ingredients do not sit long enough to become soggy. The mixture does appear to become radioactive as the odor will fill the room and seep out of the skin as perspiration after consumption. I use plenty of garlic to keep the vampires away. Joe's Slaw breath is not conducive to romantic encounters with the significant other. Often, but not always, I add mixtures of hot sauces in a serving bowl and I drink the excess liquid. Unlike my mom's Coleslaw mine is not merely moist.
